DEAR HELOISE: Awhile ago, there was one of your mother's old Chinese recipes for apricot preserves from her 1974 column. I tried it today, and it is wonderful and so easy. Thank you for the recipe. For other readers who may have missed it, here it is, as written by my mother in 1974: APRICOT PRESERVES 1 8-ounce package of dried apricots 1/2 cup of sugar 1/2 fresh lemon 4 cups of water

Put 4 cups of water in a pot, throw in your 8-ounce package of dried apricots and add 1/2 cup of sugar. Slice half a lemon in extremely thin slices and then chop in tiny pieces. …
